In the kitchen:
Remove the thigh bone and cut into cubes.
Mix the marinade ingredients in a large bowl then add the thighs and allow to marinade in the refrigerator.
Soak 4 wooden skewers in water for 15 minutes.
Skewer the marinated chicken cubes and allow to sit at room temperature for 15 minutes before cooking.
At the barbecue:
Preheat grill to 200°C for 15 minutes with the lid down.
Place the chicken skewers over direct heat. Close the lid and let it cook for 6 minutes.
Open the lid and using a pair of tongs, flip the skewers and cook for further 6 minutes.
Check with a thermometer and once the chicken reaches a core temperature 75°C it is cooked.
