For the Marinade:

  • 4 tablespoonsAbreviation dark soy sauce
  • 2 tablespoonsAbreviation Oyster sauce
  • 4 tablespoonsAbreviation Light soy sauce
  • ½ teaspoonAbreviation Chinese 5 spice powder
  • 3 tablespoonsAbreviation Castor sugar
  • 3 tablespoonsAbreviation Chinese rice wine

Instructions

    In the kitchen:

  • Slice the pork belly into 1.5 cm long strips and then remove the skin.
  • In a large bowl mix all the marinade ingredients together.
  • Add the pork into the marinade and allow it to marinate for at least 2 hours.
  • Tip: For best results marinate overnight.
  • At the barbecue:

  • Preheat grill to 200°C for 15 minutes with the lid down.
  • Place the pork on top of the roasting rack and shield. Then Roast the pork over indirect heat for 90 minutes.
  • Rotate the pork every 30 minutes throughout the cooking process and baste with marinade.
  • Check with a thermometer and when the pork reaches a core temperature of 70°C its cooked.
