Melt the butter. Scrape out the seeds from the vanilla pod. Combine all the ingredients and beat the batter until smooth. Leave it to rest while you prepare the barbecue.
At the Barbecue:
Prepare the grill for direct high heat. Place the cast-iron Griddle on the GBS cooking grate, pour some oil on the griddle and let it heat up.
Pour some batter on the griddle – 3-4 small separate spoonfuls – and let the pancakes cook until golden-brown. 1-2 min. on each side.
Serving Suggestion
Serve with maple syrup and fresh berries, if desired. For variation, try adding zest from an unwaxed orange and/or lemon to the batter.
