Why not try our delicious Applewood Smoked Ham this Christmas?
Set the barbecue up for roasting (in-direct method) at a medium/low heat.
Add a handful of Weber Firespice Apple Wood Chips to each side of the coals.
Score the fat of the ham with a sharp knife. A criss cross pattern can give a decorative effect. Stud the ham with cloves using some the cloves to secure the bay leaf in place.
Place a Weber Drip Pan below the meat, and then roast for 1½ to 2 hours until cooked in the centre to 75°C.
Leave to rest and then serve.
