Cut the bread into 1 cm slices. Spread with pesto.
Cut thin slices of mozzarella.
Wash the tomato and cut it into thin slices. Place this and the mozzarella slices on the bread. Close the sandwich.
At the barbecue:
Prepare the barbecue for direct heat – 185-200°C. Using a charcoal barbecue you need approx. 1/3 of a chimney starter with lit briquettes.
Put the waffle and sandwich iron in the GBS grate and preheat for 5-8 minutes.
Put the sandwich in the iron and close the iron firmly around it. Cook for approx. 5-10 minutes.
Then flip the iron and cook for another 5-10 minutes. Check that the surface has a crisp crust. The bread can be brushed with a little oil to ensure a crisp crust.
