Place your prawns into a tupperware container with a lid (or bowl with clingfilm). Mix all the remaining ingredients together in a small bowl until you have a nice and even consistency.
Season generously with Maldon salt and pepper and pour the marinade over the prawns. Place the lid tightly on the container and shake to cover all of the prawns.
At the barbecue
Set your barbecue to a direct high heat. Place the prawns directly over the heat and sear on both sides until opaque and bright coral in colour.
Remove the prawns from the barbecue and finish with a touch more Maldon salt on each side. Serve immediately.
