Griddling on a Weber Slate
What is griddling?
Cooking on a griddle is all about searing, sizzling, or sautéing your food. Food is cooked when it has direct contact with the cooking surface of your griddle. Griddling is best for foods you typically cook over direct heat, with short cooking times (20 minutes or less). With the solid flat plate, griddling is also perfect for foods that are chopped, sliced, diced, julienned or cubed, and lends itself to lots of different cuisines that you wouldn’t normally associate with barbecuing.
How to set up your Weber Slate for direct cooking/griddling
Remove the top cover from your Weber Slate Griddle, turn on the gas and light your barbecue. Unlike any other Weber barbecue, the Weber Slate has been designed to preheat and cook without a lid. Once lit, pre-heat your griddle with below settings.

Hot tips
- When cooking on the Weber Slate, a thin layer of oil on the griddle is recommended. Once the griddle has preheated, scrape it clean with a scraper. Drizzle a small amount of vegetable or olive oil onto the griddle and spread it with the back of a spatula.
- Spread the food into a single layer when cooking. This promotes even cooking and great caramelisation. Flip the food once it is caramelised.
- The digital thermometer (premium models) will not read accurately when using varied burner settings.
