I am a huge fan of using the Gourmet BBQ System Wok on the Weber Summit Charcoal Grill. While I love to grill dinner on the grates, using the high heat of the grill to “power” the wok opens up even more weekly meal possibilities. The wok takes the hassle from the kitchen to the ease of the backyard. I’ve used it for soups, stews, and of course, stir frys.
While grilling a stir fry is fast, the key is prep. Everything needs to be ready before the first ingredient sizzles in the wok, as once you start, there is no stopping. Here’s a video with a great stir fry recipe from Jamie Purviance. If this doesn’t make you break out the wok, I’m not sure what will.
Five-Minute Pepper Stir-Fry

Prep time: 25 minutes
Grilling time: about 5 minutes
Serves: 6
Ingredients:
Sauce
½ cup low-sodium beef broth
¼ cup oyster sauce
2 tablespoons low-sodium soy sauce
1 tablespoon granulated sugar
2 teaspoons cornstarch
1 tablespoon vegetable oil
1 tablespoon toasted sesame oil
1 tablespoon peeled, finely grated fresh ginger
2 large garlic cloves, minced or pushed through a press
1 pound top sirloin, cut into strips about 3 inches by ¼ inch by ¼ inch
3 large bell peppers, 1 red, 1 green, 1 orange, each cut into ¼-inch strips
1 medium yellow onion, cut vertically in half and thinly sliced
¼ cup fresh cilantro leaves
3 cups cooked rice
Instructions:
1. Whisk the sauce ingredients.
2. Whisk the vegetable oil, sesame oil, ginger, and garlic. Add the strips of top sirloin and turn to coat.
3. Prepare the grill for direct cooking over high heat (450° to 550°F).
4. Place a grill-proof wok on the cooking grate, close the lid, and preheat it for about 10 minutes. Bring the sauce, top sirloin mixture, bell peppers, onion, and cilantro to the grill and keep close by.
5. When the wok is smoking hot, add the top sirloin mixture, separating the meat as you add it to the wok. Grill over direct high heat, with the lid open, until the meat starts to brown and releases easily from the wok, about 1 minute, stirring once after 30 seconds. Add the bell peppers and the onion all at once. Stir to combine and cook until the vegetables turn a shade brighter, about 2 minutes, stirring frequently. Add the sauce, stir for 10 seconds, close the lid, and cook until the sauce comes to a boil, about 1 minute. Simmer until the sauce is thick enough to coat the vegetables, about 1 minute more. Stir in the cilantro. Remove the wok from the grill and serve the stir-fry immediately over warm rice.
