Preheat the grill to 350°F.
Add the cranberries, water and sugar to a small saucepan. Bring it to a simmer and cook until the cranberries start to burst.
Reduce the heat to low and add the remaining sauce ingredients. Continue cooking over low heat until the sauce thickens up, approximately 15–20 minutes.
Remove the crescent roll dough from the packaging, roll it out and pinch together all the perforations.
Cut the dough into 2" wide squares with a pizza cutter (you should get around 24).
Cut the brie into small, ½" cubes.
Spray the mini muffin pan with cooking oil spray. Press the dough into the bottom of each well, then add a piece of dough, a cube of brie cheese and a spoonful of cranberry sauce.
Place the muffin pan on the indirect side of the grill and cook until the dough is golden brown, 10–15 minutes.
Meanwhile, crisp up the prosciutto in a skillet or in the microwave and crumble it into small pieces.
When the brie bites are ready, remove them from the muffin pan and top them with the crispy prosciutto bits to serve.
