This is a quick and easy weeknight meal that takes its inspiration from the Jambalaya recipes that we all know and love. The precooked chicken sausage and shrimp cook quickly, so you can get dinner on the table in under 30 minutes.
  • Prepare the grill for Direct, Medium-High Cooking, 475°–525°F. Preheat the grill for 15 minutes and brush the grill grates clean.

  • Soak the skewers in water for 30 minutes to prevent them from burning too quickly.
  • Thread each skewer, alternating between the bell peppers, red onion, sausage, and shrimp.
  • Brush the prepared skewers with the oil and season all over with the Cajun seasoning.
  • Place on the grill and cook for 5 minutes. Flip, and continue cooking until the shrimp is pink, the sausage is browned, and the vegetables have slightly softened, 3–5 minutes longer.
  • Remove the skewers from the grill and let them rest about 5 minutes before serving.
