  • Using a mortar and a pestle, combine all the rub ingredients and grind together until finely ground. Spread the rub all over the beef. Alternatively, combine all the rub ingredients in a Weber spice grinder and grind over the beef. Cover and bring to room temperature.
  • Prepare the grill for indirect cooking over medium heat (350° to 450°F).
