Chicken Tikka (Grilled Chicken Skewers)

2 pieces chicken thigh

For the Marinade:

3 tsp. Garam masala
|
1 1⁄2 tbsp. Vegetable oil
|
1 tbsp. Hung curd
|
1⁄2 Lemon
|
3 tsp. Kashmiri chili powder
|
1 tsp. Turmeric powder
|
2 Green chillies
|
1⁄2 tsp. Salt
|
1 tsp. ginger and garlic paste
|
In the kitchen:
- Remove the thigh bone and cut into cubes.
- Mix the marinade ingredients in a large bowl then add the thighs and allow to marinade in the refrigerator.
- Soak 4 wooden skewers in water for 15 minutes.
- Skewer the marinated chicken cubes and allow to sit at room temperature for 15 minutes before cooking.
At the barbecue:
- Preheat grill to 200°C for 15 minutes with the lid down.
- Place the chicken skewers over direct heat. Close the lid and let it cook for 6 minutes.
- Open the lid and using a pair of tongs, ip the skewers and cook for further 6 minutes.
- Check with a thermometer and once the chicken reaches a core temperature 75°C it is cooked.
