Okonomiyaki (Japanese Grilled Pancake)

16pcs. thinly sliced pork belly

400g. Round cabbage
|
100g. Plain flour
|
3 tbsp. Okonomiyaki/BBQ sauce
|
100g. Bonito flakes
|
300ml Dashi stock
|
50g. Spring onions
|
Japanese mayonnaise
|
2 Eggs
|
In the kitchen:
- Finely slice round cabbage and spring onions.
- In a large mixing bowl, combine dashi, flour and eggs together and mix well.
- Mix round cabbage, spring onions and flour mix- ture together and it is ready to be griddled.
At the barbecue:
- Preheat grill to 200°C for 15 minutes with the lid down.
- Wipe griddle with some cooking oil.
- Spoon a quarter of mixture onto griddle and even out using a spatula. Then cook for 3 minutes on each side.
- Serve on a plate, spread Okonomiyaki sauce/BBQ sauce, squeeze Japanese mayonaise and sprinkle bonito flakes just before serve.
