Christmas Steamed Pudding

210gms Butter

100gms Brown sugar

4nos Egg
|
130gms Self raising flour
|
1nos Zest from orange
|
2tbsp Maple syrup
|
1pinch Salt
|
3tsp Baking powder
|
In the kitchen:
- Cream butter and sugar till fluffy.
- Then beat in eggs 1 at a time until combine.
- Next, mix in flour, salt and baking powder.
- At base of pudding mould, add in orange zest and maple syrup.
- Then pour mixture on top pf maple syrup, wrap with a layer of cling film followed by a layer of aluminium foil. (make sure it is wrapped up tight)
- Steam for 90 minutes at 100°C.
- Once done, rest for 10 minutes before removing wrappers.
At the barbecue:
- Prepare the barbecue for Indirect heat approx. 100°C. If using a charcoal barbecue, you need 1/2 a chimney starter of lit briquettes.
- Preheat Grill for 20mins with lid down.
- Place pudding into grill and Steam for 90 minutes at 100°C.
