For most people, when hunger strikes at the office they have a vending machine and maybe some stale doughnuts or leftover birthday cake in the break room to choose from. Not me.
I run the test kitchen at Weber-Stephen Products, which means I’m constantly surrounded by hot-off-the-grill steaks, bratwurst, ribs, huge slabs of brisket and pork shoulder.
We have a running joke that instead of 90-day performance reviews we should have 90-day weigh-ins. Seriously. It’s that bad.
Don’t get me wrong, I like that stuff as much as the next person, but I also like fitting into my jeans so I don’t want to eat that stuff Every. Single. Day.
Which is why, when I grill, I like to focus on lighter, healthier foods like fish, vegetables, chicken, pork and even fruit. I’m a foodie at heart so I’m not willing to sacrifice flavor in an effort to eat healthy – which is why grilling is my favorite way to cook. I can make delicious, flavorful food that doesn’t break the calorie bank.
One of my go-to grill recipes is Grilled Hawaiian Chicken. The marinade uses soy sauce and pineapple juice so it’s loaded with flavor and the bite-size meat on the skewers cook quickly. Your taste buds and your skinny jeans will thank you.
