  • Completed step 2 tablespoons grated Parmesan cheese
  • Completed step 1 tablespoon finely chopped chives

Instructions

hese umami-packed oysters are layered with flavours of buttery sweet chilli and delightfully topped with cheesy parmesan. I say this recipe serves two, but I could easily eat a dozen myself.
  • On a side burner, stove top or using a Weber Frying Pan, heat the butter, garlic, Worcestershire sauce, hot chilli sauce and lemon juice in a pan over high heat. Bring the mixture to a boil and cook for 2 to 3 minutes.
  • Prepare the barbecue for cooking using indirect medium heat (190°C-230°C) and preheat as directed. See below for information on set up methods on a Premium Gas Barbecue. If you’re using a Summit FS38 E, set the adjustable cooking grill to level 3. Preheat the IR burner on High for 3 minutes with the lid open.
    Prepare the barbecue for cooking using indirect medium heat (190°C-230°C). Set up your barbecue with a convection tray and a roasting trivet and preheat as directed. Refer to Step 6 for information on Weber Q settings and set up methods.
    Prepare the charcoal barbecue for cooking over indirect medium heat (190°C-230°C). See below for information on how to set up a Weber Kettle.
  • Place a teaspoon of the butter mixture over each oyster and top with a sprinkle of grated parmesan cheese.
  • Once the barbecue has preheated, adjust it to the settings for indirect medium heat. Place the oysters on the barbecue, close the lid, and roast them for 5 to 10 minutes, or until the liquid in the oyster is bubbling. If you’re using a Summit FS38 E, place the oysters on the adjustable cooking grill. Leave the barbecue lid open and cook for 3 minutes, or until the cheese is golden and the liquid in the oysters is bubbling.
    Once the barbecue has preheated, adjust it to the settings for indirect medium heat. Place the oysters onto the trivet and roast them with the lid closed for 5 to 10 minutes, or until the liquid in the oyster is bubbling.
    Once the barbecue has preheated, brush the cooking grills clean. Place the oysters in the centre of the cooking grill, between the two charcoal baskets. Roast the oysters over indirect medium heat with the lid closed for 5 to 10 minutes, or until the liquid in the oyster is bubbling.
  • Remove the oysters from the barbecue and garnish with a sprinkle of the finely chopped chives.
  • Indirect heat is not available on a Weber Traveler.
