Two Step Pork Chop
  • Completed step 6 Pork loin chops, about 15-25mm thick (trimmed of rind and excess fat)

For the marinade

  • Completed step ¼ cup 1/4 cup tomato sauce
  • Completed step 2 tablespoons 2 tablespoons apple juice
  • Completed step 2 tablespoons 2 tablespoons extra-virgin olive oil
  • Completed step 2 tablespoons 2 tablespoons red wine vinegar
  • Completed step 1 tablespoon 1 tablespoon worcestershire sauce
  • Completed step 2 teaspoons 2 teaspoons minced garlic
  • Completed step 1 teaspoon 1 teaspoon tabasco sauce
  • Completed step 1 teaspoon 1 teaspoon chilli powder
  • Completed step ½ teaspoon 1/2 teaspoon salt

Instructions

  • Whisk all of the marinade ingredients in a medium bowl. Place the pork chops in a large, resealable plastic bag and pour in the marinade. Press the air out of the bag and seal it tightly. Turn the bag several times to distribute the marinade, and refrigerate for 2 to 4 hours.
  • Prepare the barbecue for direct cooking over medium heat (180° to 230°C).
  • Remove the chops from the bag and discard the marinade. Barbecue the chops over direct medium heat, with the lid closed, for 4 to 5 minutes on each side, or until no longer pink in the centre.
