Low and Slow on a Weber Q
Low and slow cooking requires indirect heat and temperatures between 95°C and 135°C. It is fantastic for slowly cooking tough cuts of meats such as ribs, brisket, shoulders, cheeks, or other cuts that require a low temperature and long cooking time (usually 3 hours plus). Low and slow cooking is not achievable on all Weber Q models. To see if your Weber Q can be used for low and slow cooking, please refer to the information below on recommended settings.
HOW TO SET UP YOUR WEBER Q FOR LOW AND SLOW
Step 1: Ensure that both cooking grills (not a hotplate) are in the barbecue.
Step 2: Place a convection tray horizontally on the far-right side of the cooking grill. Place a roasting trivet on top of the convection tray.
Step 3: Place a small drip pan filled with 500 mL of tap water to the left of the convection tray and trivet, in a vertical position.

This low temperature is only achievable on Q models with a Plus (+) burner. Baby Qs and Weber Q models are compact powerhouses, designed for cooking at higher temperatures due to their compact design and burner functionality.
Note: To light the Plus (+) burner on your barbecue, first light the Q burner, then the Plus (+) burner, and finally turn off the Q burner.

HOT TIPS
- When cooking at low temperatures, it’s important to regularly monitor the cooking temperature inside the barbecue using either a lid thermometer or ambient thermometer. If necessary move your barbecue to a sheltered area away from wind before cooking.
- Check the water pan every 2 to 3 hours and refill it with warm water as needed.
- Spritzing your meat with liquid (such as water, beef stock, or apple cider vinegar) from a spray bottle can improve both the flavour and texture of your meats.
