Chilli and Coriander Roast Cod

15g chopped fresh coriander

1 small white onion chopped

4 tbsp of sunblushed/ sundried tomatoes
|
75ml olive oil
|
2 grated garlic cloves
|
4 tbsp of chilli jam Salt and pepper

This tasty and flavoursome roast cod recipe is fantastic for all seafood lovers.
- Very finely chop coriander, onion and sun blushed tomatoes then add to a bowl. Add the oil, grated garlic and chilli jam, combine and add salt and pepper.
- Smother the fish in the marinade and allow to infuse for at least 30 minutes.
- Place fish in a Fish Basket and grill on a medium heat for 20 minutes turning halfway through or until cooked through.
