Steaks and Scallops

Ingredients

200gms Ribeye steak
|
4pcs Large scallops
|
1/2 Zest from lemon
|
To taste Salt
|
To Taste Black pepper
|
In the kitchen:
For Ribeye steak- Bring steak to room temperature before grilling.
- Season with salt and pepper generously on both sides.
- Oil the steak before putting on the grill.
For Scallops
- Remove scallops from chiller and season with salt, pepper and lemon zest.
- Sprinkle oil on scallops before grilling.
At the barbecue:
- Prepare the barbecue for direct heat, approx. 220°c. If using a charcoal barbecue, you need 3/4 chimney starter of lit briquettes.
- Preheat grill to 220°c, then grill steak for 2 minutes each side with the lid down. remove from grill and rest for 5minutes before serving.
- Preheat grill to 220°c. then grill scallops for 1 minute each side, remove from grill and rest for 1 minute before serving.
