Very finely chop coriander, onion and sun blushed tomatoes then add to a bowl. Add the oil, grated garlic and chilli jam, combine and add salt and pepper.
Smother the fish in the marinade and allow to infuse for at least 30 minutes.
Place fish in a Fish Basket and grill on a medium heat for 20 minutes turning halfway through or until cooked through.
