For the Marinade:
4 tablespoons dark soy sauce

In the kitchen:
Slice the pork belly into 1.5 cm long strips and then remove the skin.
In a large bowl mix all the marinade ingredients together.
Add the pork into the marinade and allow it to marinate for at least 2 hours.
Tip: For best results marinate overnight.
At the barbecue:
Preheat grill to 200°C for 15 minutes with the lid down.
Place the pork on top of the roasting rack and shield. Then Roast the pork over indirect heat for 90 minutes.
Rotate the pork every 30 minutes throughout the cooking process and baste with marinade.
Check with a thermometer and when the pork reaches a core temperature of 70°C its cooked.
