Rub

  • Completed step 2 teaspoons kosher salt
  • Completed step 1½ teaspoon pure chile powder
  • Completed step 1½ teaspoon granulated onion
  • Completed step ¾ teaspoon granulated garlic
  • Completed step ½ teaspoon paprika
  • Completed step ½ teaspoon dried marjoram
  • Completed step ¼ teaspoon ground cumin
  • Completed step ¼ teaspoon freshly ground black pepper
  • Completed step ⅛ teaspoon ground cinnamon
 
  • Completed step 4 T-bone steaks, each 340 to 455 grams and about 2.5 centimeters thick
  • Completed step 2 tablespoons extra-virgin olive oil
  • Completed step 2 limes, cut into wedges (optional)

Instructions

  • In a small bowl combine the rub ingredients. Lightly brush both sides of the steaks with the oil and season evenly with the rub, gently pressing the spices into the meat. Allow the steaks to stand at room temperature for 15 to 30 minutes before grilling.
  • Prepare the grill for direct cooking over high heat (230° to 290°C). If you're using a charcoal grill, keep a small part of the charcoal grate clear of briquettes as a safety zone of indirect heat.

Remove from the grill and let rest for 3 to 5 minutes. Serve warm with lime wedges, if desired.
