Treasure Cave® Blue Cheese Stuffed Portabella Nachos

Ingredients

4 large portabella mushrooms, cleaned, stems and black gills removed

4 Roma tomatoes, chopped

2 jalapeño peppers, chopped

1 large Vidalia onion, peeled and chopped

4 ounces of Treasure Cave® Blue Cheese crumbles

1 tablespoon Worcestershire sauce

1/2 cup of corn tortilla chips, crumbled (keep the remainder of the bag for dipping)

1/4 cup of olive oil

1/4 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

1/4 Weber Kickin' Chicken season to taste

1/4 Garlic Powder

Instructions

  1. In a large bowl mix the tomatoes, jalapeno peppers onion, Treasure Cave® Blue Cheese, crumbled tortilla chips, half the olive oil, salt, pepper and Weber’s Kickin’ Chicken and cover. Place in fridge for about 30 minutes.
  2. Prepare the grill for direct cooking at medium heat (350° to 450°F)
  3. Coat the cap of the mushroom with remaining olive oil. Stuff the mushrooms with the Treasure Cave® Blue Cheese mixture. Grill the mushrooms for 5 to 6 minutes. Remove from grill, place on cutting board or pan to cool for about 3 minutes. Cut into pieces, place on tortilla chips to serve and enjoy!
