Season the minced beef with the 2 tbsp rub. Then shape the meat into 6 equally sized balls.
Finely chop the spring onions and set aside.
AT THE GRILL
Preheat the griddle for 10 mins. on high heat
Oil the griddle.
Place the balls on the preheated griddle. Immediately after place the tortillas on top of the meat and “smash” the balls flat using a griddle press. The patties should be very flat. Close the lid and leave to sear 1-2 mins.
Flip the patties so the tortillas are now directly on the griddle. Sprinkle with cheddar cheese and the chopped spring onions on the top of each ball, then close the lid and leave to grill for 1-2 mins.
Fold the tortillas to a taco shape. Set aside for resting and serving.
