Chicken Souvlaki

Ingredients
Marinade
- ¼ cup finely chopped fresh mint
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice (from 1 lemon)
- 1 tablespoon dried oregano
- 3 garlic cloves, minced
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
Tzatziki
- ¾ cup coarsely grated English cucumber
- Kosher salt
- 1 cup plain whole-milk Greek yogurt
- 2 tablespoons finely chopped fresh mint leaves
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon fresh lemon juice
- 1 clove garlic, minced or pushed through a press
- ¼ teaspoon coarsely ground black pepper
- 1½  pounds of chicken breast
- 6 pita breads, each about 6 inches in diameter
- Lemon wedges

Instructions
- Cut the pork loin into 1-inch thick slices, then cut each slice into 1-inch cubes.
- In a medium bowl whisk together all the marinade ingredients. Put the pork cubes in the bowl and stir to coat evenly. Cover and refrigerate for 2 to 4 hours.
- In a fine-mesh sieve, toss the cucumber with ½ teaspoon salt, then press against the cucumber with the back of a spoon to force out excess moisture. In a bowl combine the cucumÂber and remaining tzatziki ingredients, stir to mix, and season with salt. Cover and refrigerate until serving.

- Brush the cooking grates clean. Grill the skewers over direct high heat, with the lid closed as much as possible, until the chicken is 165 F, 5 to 7 minutes, turning once. Remove from the grill.
- Grill the pita over direct high heat until streaked with light char marks, about 15 seconds on each side. To assemble, spoon some tzatziki down the middle of each pita and top with the meat. Wrap the bread around the meat and serve warm.
