- 1 pork rib roast, about 6 pounds with 8 ribs, bones frenched
Sauce
- ¼ cup whole-grain mustard
- ¼ cup mayonnaise
- 2 tablespoons plain yogurt
- 2 tablespoons sour cream
- 1 tablespoon finely chopped fresh chives
- 1 teaspoon finely chopped fresh thyme leaves
- ⅛ teaspoon kosher salt
- ⅛ teaspoon freshly ground black pepper

- Combine the rub ingredients. Season the roast all over with the rub, using more on the meaty parts. Allow the roast to stand at room temperature for 30 minutes before grilling.
