- 2 teaspoons white balsamic vinegar
- ¼ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 8 ounces thinly sliced pancetta
- 2 cups loosely packed mixed baby greens
- 4 medium heirloom tomatoes, cut crosswise into slices
- 1 ball (8 ounces) burrata cheese

Serve warm.
