Kettle Corn

Serves: 2-4 | Prep time: 5 minutes | Grilling time: about 3-6 minutes | Special Equipment: Weber Dutch oven or any Dutch oven

 

Ingredients

  • 3 tablespoons oil, like coconut oil, canola oil, or other vegetable oil
  • ½ cup corn kernels
  • ¼ to ½ cup white granulated sugar, to taste
  • 1 teaspoon salt

Instructions

  1. Set up kettle for direct cooking underneath the middle of the grill grate.
  2. Place the Dutch oven over top of the lit coals to pre-heat.
  3. After a couple of minutes add the oil and sugar together and stir to melt most of the sugar. 
  4. Place 2-3 kernels into the oil and place the lid on top and listen for them to pop.
  5. Once those 2-3 kernels have popped lift the lid and add the rest of the kernels and place the lid back on.
  6. Once the kernels start to pop, shake the Dutch oven a bit to move the kernels around.
  7. As the popping begins to slow down remove the Dutch oven from the heat and shake it one last time.
  8. Carefully pour the popcorn out of the hot Dutch oven to a large bowl to cool and sprinkle salt over top to taste.
  9. Once cooled enjoy or store in an airtight container.
