Grilled Chicken Breast
stuffed with
goat cheese, grapes & chestnut

SERVES: 4 | PREP TIME: 30 MINUTES | COOKING TIME: 20-25 minutes on medium-low heat
Ingredients:
- 4 Boneless chicken breasts
- 150g of goat cheese
- 3 thyme sprigs – chopped; (leaves only, reserve 1 tsp for garnish)
- 1 cup red seedless grapes – (cut into quarters)
- ½ cup of chestnuts – (roughly chopped)
- 1 teaspoon of garlic – (minced)
- 1 teaspoons of kosher salt
- ½ teaspoon of black pepper
- 2 tablespoons of cooking oil
- Salt and pepper to taste
- 2 tablespoons of balsamic glaze (for garnish)
Instructions:
- Preheat the Weber SmokeFire Pellet Grill to 400°F.
- Mix the goat cheese, chopped thyme, grapes, chestnuts, garlic and salt and pepper together in a bowl and portion into 4 roughly equal portions.
- Using a paring knife, carefully cut a slit into the thickest part of the chicken breast creating a pocket about 2-3 inches into the chicken. Spoon one portion of the goat cheese mixture into the chicken breast and repeat for the next 3.
- Once each piece of chicken is stuff oil the exterior of each piece and season with salt and pepper on both sides.
- Grill the chicken on the SmokeFire until it reaches an internal temperature of 165°F, throughout this process try to flip the chicken only once.
- Once fully cooked remove the stuffed chicken from the grill and rest on a plate under loosely tented foil. To garnish drizzle the balsamic glaze overtop and garnish with fresh thyme.
