Grilled Chicken Breast
stuffed with
goat cheese, grapes & chestnut

Recipe from Canada’s One and Only Weber Grill Academy

SERVES: 4 | PREP TIME: 30 MINUTES | COOKING TIME: 20-25 minutes on medium-low heat 

Ingredients:

  • 4 Boneless chicken breasts
  • 150g of goat cheese
  • 3 thyme sprigs – chopped; (leaves only, reserve 1 tsp for garnish)
  • 1 cup red seedless grapes – (cut into quarters)
  • ½ cup of chestnuts – (roughly chopped)
  • 1 teaspoon of garlic – (minced)
  • 1 teaspoons of kosher salt
  • ½ teaspoon of black pepper
  • 2 tablespoons of cooking oil
  • Salt and pepper to taste
  • 2 tablespoons of balsamic glaze (for garnish)

Instructions:

  1. Preheat the Weber SmokeFire Pellet Grill to 400°F.
  2. Mix the goat cheese, chopped thyme, grapes, chestnuts, garlic and salt and pepper together in a bowl and portion into 4 roughly equal portions.
  3. Using a paring knife, carefully cut a slit into the thickest part of the chicken breast creating a pocket about 2-3 inches into the chicken. Spoon one portion of the goat cheese mixture into the chicken breast and repeat for the next 3.
  4. Once each piece of chicken is stuff oil the exterior of each piece and season with salt and pepper on both sides.
  5. Grill the chicken on the SmokeFire until it reaches an internal temperature of 165°F, throughout this process try to flip the chicken only once.
  6. Once fully cooked remove the stuffed chicken from the grill and rest on a plate under loosely tented foil. To garnish drizzle the balsamic glaze overtop and garnish with fresh thyme.
