Prawn Chorizo And Lime Skewers
  • Completed step 16 large green prawns, shelled, de-veined, tails intact
  • Completed step 3 limes, cut into 1.5 cm thick wedges
  • Completed step 2 smoked chorizos, sliced into 1 cm thick rounds

Marinade:

  • Completed step 3 tablespoons finely chopped fresh coriander 
  • Completed step 1 red chilli, seeds removed, finely chopped
  • Completed step 2 garlic cloves, finely chopped
  • Completed step 2 tablespoons olive oil
  • Completed step ¼ teaspoon sea salt

Shrimp on the barbie never looked so good! The best part? Once grilled, stand the skewer upright, squeeze the lime, and let the caramelised, zesty lime juice trickle over the prawn and smoky chorizo.
  • If you’re using wooden skewers, soak in water for at least 30 minutes.
  • Prepare the barbecue for cooking over direct high heat (250°C-290°C) and preheat as directed. See below for information on Premium Gas set up methods.

  • In a bowl, combine the prawns with the marinade ingredients. Thread the prawns, chorizo, and lime onto the skewers.
  • Once the barbecue has preheated, brush the cooking grills clean with a wire brush. Grill the prawn skewers over direct high heat, with the lid closed, for 4 minutes, flipping halfway through or until the prawns are opaque and cooked through.

  • Serve immediately. Encourage your guests to hold the skewer upright and squeeze the lime so the juices run over the prawns and chorizo.
